I Finally Solved the Mystery – The Beam/Heaven Hill Funk

For months I have been trying to figure out my aversion to the finish on Heaven Hill products, this strange peanut flavor on the finish.  Thanks to Chuck Cowdery responding to my emails, I finally figured it out.  The Beam family, both at Jim Beam and Heaven Hill, uses a particular yeast strain and this yeast strain creates a particular funk on the finish.  My palate just seems to be particularly sensitive to it.  I really wanted to like bourbons like Larceny; now I know why I don’t like them.  I also know not to blow money on a Parker’s or any overly expensive Jim Beam limited releases.  Griss just can’t abide the funk tonight.
